Christmas is in the air and for us that means the scent of cinnamon, cardamom and cloves creeping through the streets of Aachen. In our opinion, the Christmas spices are as much a part of Christmas as the Christmas tree or the Christ Child and can be found in the delicious Spekulatius cookies. While the aromatic pastry is loved and snacked on by everyone today, Spekulatius was considered a particularly exquisite delicacy until the 20th century. The reason for this was the expensive price of the Spekulatius spices.
